The pineapple is a fruit consumed world wide. According to researchers, it originates Central America and the Northeast of Brazil. During the period of colonial expansion, it was taken to Europe, Africa and Asia. Today it is produced in Brazil in almost every state, and the predominant varieties are Pérola and Hawaii (Smooth Cayene).

Nowadays, the pineapple is very widely used in the Brazilian cuisine, either as a fruit or as juice, candies, fillings, ice creams, etc. In nutritional terms, the pineapple is important as a fruit that facilitates digestion as it contains an enzyme called bromelin, which breaks down protein into smaller molecules.
